This dish is evidence that even with just a few ingredients, you can create a magical and satisfying pasta meal that’s easy to prepare.
7 Ingredients:
200g dried spaghetti pasta
2 tsp extra virgin olive oil
2 garlic cloves, thinly sliced
Pinch dried chilli flakes
10 (325g) medium green prawns, peeled (tails intact), deveined
3 medium tomatoes, deseeded, finely chopped
1 tbsp chopped fresh continental parsley leaves
Step 1: Start by cooking the pasta according to the instructions on the packet. Once it’s cooked, drain the pasta, making sure to save 1/4 cup of the cooking liquid.
Step 2: Next, heat oil in a large frying pan over medium-high heat. Add garlic and chilli, and cook for a minute or until they become fragrant. Add the prawns and continue to cook for another 2-3 minutes, or until they turn pink and are fully cooked.
Step 3: Add the cooked pasta, tomatoes, and the reserved cooking liquid to the pan. Cook for another 2 minutes or until everything is heated through. Don’t forget to season with salt and pepper to taste. Finally, stir through the chopped parsley before serving.
